Wild morel mushrooms that are cleaned and blast-frozen at peak spring season for maximum flavor. They have a rich, nutty taste that comes through beautifully after freezing. Usage: Sauté or stew from frozen – they are ready for sauces, steak toppers, and gourmet ragouts right out of the bag. Chef appeal: Fresh morels have a very short season and are pricey; frozen morels allow chefs to menu these luxurious mushrooms any time, at a known cost. They reheat well and still deliver that coveted morel taste and spongy texture to soak up sauces.

  • Chef Tip: When cooking frozen mushrooms, cook them in smaller batches at high heat. This ensures the liquid they release evaporates quickly, allowing the mushrooms to brown rather than stew. Adding a bit of butter or oil after the initial water has cooked off will help in caramelizing them. Avoid using frozen mushrooms for crispy fried garnishes or salads; save these for cooked applications where their softer texture and deep flavor are assets.
