Dried turkey tail (Trametes versicolor), a woody bracket fungus used to brew teas and infuse broths rather than eaten as a solid ingredient. Mild, slightly bitter, earthy flavor.

How to Use

Simmer shredded pieces in water or stock for 45 to 60 minutes to draw out flavor, then strain — the mushroom itself stays woody and is discarded. Works as a background note in long-simmered vegetable and bone broths, or steeped on its own as a tea.
